Vanilla Custard Filling
A simple vanilla custard filling, useful for tarts (or alone by itself in a bowl).

- 1/2 cup sugar1/4 cup all-purpose flour1/2 teaspoon salt2 cups milk2 egg yolks, lightly beaten2 teaspoons vanilla extract

- In a small saucepan, combine the sugar, flour and salt. Stir in milk until smooth.Cook and stir over medium-high heat until thickened and bubbly.Reduce heat; cook and stir 2 minutes longer.Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan.Bring to a gentle boil, stirring constantly; cook and stir 2 minutes longer.Remove from the heat. Gently stir in vanilla.
